Black Bean Turkey Chili

Ingredients

  • 1 large onion, chopped
  • 2 tbps S Sensations Extra Virgin 100% Olive Oil
  • 2 tbps Compliments Chili Powder
  • 1 tsp ground cumin
  • Salt and freshly ground pepper
  • ground turkey breast 11/4 pounds
  • 1 clove garlic, minced or pressed
  • 2 cans Compliments Black Beans, rinsed and drained 15 ounces each
  • 2 cups Compliments Chicken Broth
  • 11/2 cups fine shredded Cheddar Jack Cheese
  • optional Lucerne® Sour Cream
  • optional Chopped green onions

Directions

  • Step 1

    In a deep, 12-inch nonstick frying pan or 4- to 5-quart pan, combine onion, olive oil, chili powder, cumin, and salt and pepper to taste over medium-high heat.

  • Step 2

    Stir often until onion begins to soften and spices are fragrant, 3-4 minutes.

  • Step 3

    Add turkey and garlic to pan.

  • Step 4

    Cook, stirring often and crumbling meat, until turkey is lightly browned, about 4 minutes.

  • Step 5

    Add beans and broth.

  • Step 6

    Bring to a boil over high heat, then reduce heat and simmer just until heated through,2-3 minutes.

  • Step 7

    Spoon chili into serving bowls.

  • Step 8

    Offer cheese, sour cream, and green onions to add to taste.
