Montreal Smoked Meat Crostini

Ingredients

  • 16 baguette slices, each about ½-in. (1-cm)
  • 3 tbsp olive oil 45 mL
  • 1 cup finely chopped sweet pickles 250 mL
  • ¼ cup finely chopped sweet onion 60 mL
  • 2 tbsp finely chopped fresh parsley 30 mL
  • 2 tbsp mustard seeds 30 mL
  • 2 tbsp apple cider vinegar 30 mL
  • 4 tsp Sensations by Compliments Prepared Dijon Mustard 20 mL
  • 8 thin slices Montreal smoked meat or corned beef, cut in half

Directions

  • Step 1

    Preheat broiler to high. Brush baguette slices with olive oil. Place on large baking sheet. Broil 1 to 2 min. per side or until toasted. Set aside.

  • Step 2

    To make a relish, in bowl, stir pickles with onion, parsley, mustard seeds and vinegar. Let stand 15 min. for flavours to marinate.

  • Step 3

    Spread mustard on each baguette slice. Top with slice of meat. Garnish with ½ tsp (2 mL) of pickle mixture (there will be some left over for another use.)
