Ingredients
- Bannock:
- 2 cups
- all purpose flour
- 1 tbsp
- sugar
- 2 tsp
- baking powder
- 1⁄2 tsp
- salt
- 1⁄2 tsp
- instant yeast
- 3⁄4 cup
- water, warm
- 1 tbsp
- vegetable oil, plus more for frying
- Smoked salmon:
- 12 oz
- smoked salmon
- 340 g
- 4
- Lebanese cucumbers
- 4
- hard-boiled eggs
- 1⁄2 cup
- cream cheese
- 4 slices
- red onion
- 4 tsp
- mayonnaise, plus more if needed
- 4 tsp
- capers
- 4 tsp
- Everything Bagel Seasoning
- 4
- sprigs fresh dill
- 8 large
- lettuce leaves
- salt and pepper to taste
Directions
Step 1
Bannock: In a medium bowl, add the flour, sugar, baking powder, salt and yeast and mix to combine. Make a well in the center of the dry ingredients and add the water and oil.
Step 2
Using a fork, begin mixing from the center out until and shaggy dough is formed and there are no dry spots of flour
Step 3
Transfer the dough to a lightly floured work surface and gently knead until the dough is well mixed and bounces back to touch, about 1 minute
Step 4
Cover the dough and let rest 15 minutes
Step 5
Meanwhile, in a deep frying pan or skillet, heat 1” of oil to 350ºF (175ºC)
Step 6
Divide the dough into four equal pieces and shape into ovals about 8” long and 3” wide using a rolling pin. Carefully transfer the bread to the frying pan without overcrowding them. You might need to fry them in two batches
Step 7
Flip the bannock when one side is golden brown, about 2 minutes.
Step 8
Fry until all sides are golden, about 5 minutes total.
Step 9
Transfer to a paper-towel-lined baking sheet and let cool.
Step 10
Smoked Salmon: On a large cutting board, place the smoked salmon, cucumbers, eggs, cream cheese, red onion, mayonnaise, capers, Everything Bagel Seasoning and dill
Step 11
Using a knife, begin chopping the ingredients together until they form a uniformly chopped mixture. If the mixture is too dry, add some mayonnaise
Step 12
Season to taste with salt and pepper
Step 13
On a work surface, cut the bannock in half horizontally without going all the way through to the other side.
Step 14
Open them like a book and place a lettuce leaf on each half. Cover the insides with the chopped mixture. Serve immediately.
