Cardamom Spiced Granola

Ingredients

  • 1/2 cup canola oil 125 mL
  • 1/2 cup Sensations by Compliments 100% Canadian Maple Syrup 125 mL
  • 1/4 cup coconut oil, melted 60 mL
  • 1 tsp vanilla extract 5 mL
  • 3 tbsp packed brown sugar 45 mL
  • 1 tsp ground cardamom 5 mL
  • 1/2 tsp ground cinnamon 2 mL
  • pinch salt
  • 3 cups Compliments Old Fashioned Rolled Oats 750 mL
  • 1 bag Compliments Chopped Pecans (approx.1 cup/250 mL) 100 g
  • 3/4 cup unsweetened desiccated coconut 175 mL

Directions

  • Step 1

    Line a baking sheet with parchment paper. Preheat oven to 300˚F (150˚C). In large bowl, combine canola oil, maple syrup, coconut oil and vanilla. Whisk in brown sugar, cardamom, cinnamon and salt. Add rolled oats, pecans and coconut; tossing to coat. Spread mixture on lined baking sheet.

    Bake 30 to 40 min., stirring every 10 min., or until golden and crisp. Cool completely. Store in airtight container.

Tip

Add 1 cup (250 mL) chopped dried fruit, such as raisins, dates, apricots or cranberries.

Layer granola with Greek yogourt and fresh fruit such as mango for a breakfast parfait.
