Line a baking sheet with parchment paper. Preheat oven to 300˚F (150˚C). In large bowl, combine canola oil, maple syrup, coconut oil and vanilla. Whisk in brown sugar, cardamom, cinnamon and salt. Add rolled oats, pecans and coconut; tossing to coat. Spread mixture on lined baking sheet.
Bake 30 to 40 min., stirring every 10 min., or until golden and crisp. Cool completely. Store in airtight container.
Add 1 cup (250 mL) chopped dried fruit, such as raisins, dates, apricots or cranberries.
Layer granola with Greek yogourt and fresh fruit such as mango for a breakfast parfait.
