Ingredients
- Bannock:
- 2 cups
- all-purpose flour
- 1⁄4 cup
- granulated sugar
- 1 Tbsp
- baking powder
- 1⁄2 tsp
- salt
- pinch instant yeast
- 2⁄3 cup
- whole milk, warm
- 1⁄2 cup
- unsalted butter, melted
- 1
- egg
- 1 cup
- fresh blueberries
- Icing:
- 1⁄4 cup
- fresh blueberries, plus more for top
- 1⁄4 cup
- cream cheese
- 2 Tbsp
- icing sugar
Directions
Step 1
Bannock: Preheat the oven to 375ºF
Step 2
Line a baking sheet with parchment paper and set aside
Step 3
In a medium bowl, add the flour, sugar, baking powder, salt and yeast and mix to combine. Create a well in the dry ingredients and add the milk, melted butter and egg. Using a fork, begin mixing from the center out until and shaggy dough is formed and there are no dry spots of flour
Step 4
Add the blueberries and carefully begin folding in the blueberries using your hands. The dough will be quite wet
Step 5
Transfer the dough to a lightly floured work surface. Gently fold the dough over itself a few times to thoroughly incorporate the blueberries. Shape into a round 8” in diameter
Step 6
Place on the prepared baking sheet and prick the entire top of the bannock using a fork. Place in the centre of the oven and bake until the top begins to brown, about 30 minutes. Remove from the oven and let cool
Step 7
Icing: In a small tall-sided container, combine the icing ingredients and blend them using an immersion blender
Step 8
Once the bannock is completely cool, spread the icing over the top of the bannock and add fresh berries to decorate
