Ingredients

Dough
1 cup
warm water
2 tbsp
melted butter
2 tbsp
sugar
1 tsp
instant dry yeast
¼ tsp
pinch salt
2 ¼ cups
unbleached all-purpose flour
Canola oil, for frying
Maple Bacon
4 slices
bacon
¼ cup
maple syrup
Toppings
½ cup
peanut butter (or other nut butter)
¼ cup
roasted unsalted peanuts, crushed

Directions

Step 1

Maple Glazed Bacon: In a large skillet, lay the bacon slices flat. Cook over low heat for 8 to 10 minutes, until golden brown, turning halfway through cooking. Pour out most of the excess fat. Add the maple syrup and cook for 1 minute to glaze the slices. Let cool.

Step 2

Dough: In the bowl of the stand mixer, combine the water, butter, sugar, yeast and salt. (see note) Add the flour. With the dough hook, mix for 2 to 3 minutes. Place the dough in a clean, lightly oiled bowl. Let rest in a warm, humid place until doubled in volume, about 1 hour.

Step 3

Preheat the oil in a deep fryer to 375°F (190°C). Line a baking sheet with paper towels.

Step 4

On a floured work surface, cut the dough into 4 to 6 pieces, depending on the size of your fryer. Roll out each piece into a thin (3 to 5 mm) oval. Slip 1 piece of dough into the oil, ensuring it does not fold over onto itself, using tongs if needed. Watch out for splattering. Fry for 2 minutes on each side or until golden. Drain on the paper towels. Repeat with the remaining dough.

Step 5

Topping: On a work surface, spread the peanut butter over the warm pastry. Top with bacon pieces and peanuts. Drizzle with the glazing maple syrup. Repeat with the remaining ingredients.

Tip

Make sure that the warm water and butter mixture is just warm to the touch to keep the yeast alive.
