Meanwhile, whisk together ¼ cup sour cream, ¼ cup mayonnaise, ¼ cup chopped cilantro, ½ tsp ancho chili powder, 2 tsp lime zest, and 2 tbsp lime juice. Season the mixture with salt. Set aside. Cook 1 box (about 400 g) ditali pasta according to package directions. Toss hot pasta with dressing. Mix in corn, ⅓ cup crumbled cotija or feta cheese and garnish with fresh cilantro.
