Mexican-Inspired Corn Pasta Salad

Everything you love about  Elote-style grilled corn on the cob, turned into a pasta salad.  To make: Grill 3-4 cobs of corn until kernels begin to turn golden brown and look charred, about 3 min. per side. Transfer to a plate to cool before cutting off the cob. Meanwhile, whisk together ¼ cup sour cream, ¼ cup mayonnaise, ¼ cup chopped cilantro, ½ tsp ancho chili powder, 2 tsp lime zest, and 2 tbsp lime juice. Season the mixture with salt. Set aside. Cook 1 box (about 400 g) ditali pasta according to package directions. Toss hot pasta with dressing. Mix in corn, ⅓ cup crumbled cotija or feta cheese and garnish with fresh cilantro.
