To make the pesto: In a food processor, combine ¾ cup fresh mint, ⅓ cup fresh parsley, 2 Tbsp grated Parmeggiano-Reggiano, 2 Tbsp toasted pine nuts, 2 tsp lemon zest, 2 Tbsp lemon juice and ¼ tsp salt. Pulse to a coarse paste. Transfer to bowl, stir in 2 Tbsp olive oil (add more for thinner pesto). Set aside. Then start on the skewers! Cut halloumi into 1-in square cubes. Slice zucchini into thin ribbons with a Y-shaped peeler or mandoline slicer. Skewer halloumi alternately with zucchini (ribbon-style). Brush with olive oil and grill over high heat until skewers are lightly charred, 2-3 mins. This unique combo of flavours and textures make for a versatile side that’s also easy to prepare!
