Yes, you can make friends with salad. The trick? Salsa verde. It’s the secret weapon to a fast, zesty and bright summer salad. Corn and salsa? That’s right – skip the dressing and salsa those kernels to the dinner table. To make: Heat barbecue to high. Grill the corn until lightly charred, about 5 to 7 min. Cool, then slice the kernels from the cob into a bowl. Stir in 1 ¼ cups finely diced red onion, juice and zest from 2 limes, 1 tsp salt, 1 small red or green finger chili, finely diced, 3 large avocados diced, ¼ cup salsa verde and ¼ cup finely chopped fresh cilantro.

Give weeknight chicken flair with a crunchy, zesty tomato topping! To make: Preheat oven to 375°F (190°C). In a bowl, mix together 1/2 cup panko breadcrumbs, ⅓ cup salsa, ½ cup finely grated Parmesan cheese, 2 tbsp chopped parsley, 1 tbsp oil and ¼ tsp pepper. Lightly pat breadcrumb mixture onto chicken and bake on a parchment paper-lined baking sheet until chicken is cooked through, about 20 to 25 min.
