Turn a simple potato chip bag into a trendy picnic-friendly potato chip charcuterie bag. All you have to do is pack 1 bag of kettle-cooked potato chips, Black Forest ham, dry-cured salami, hot honey ham, cubed Brie cheese and some hot pepper rings. When you arrive at your picnic site, carefully cut open the chip bag and split it down the middle so it opens at the top. Tear the deli meats and place them on top of the chips. This isn’t your average salad–it’s a Caesar you can carry! Prepare bread bowls by slicing off the top ¼ of 4 buns and hollowing out the centres. Tear filling into 1 to 2-in. pieces. Place in a bowl and drizzle with olive oil. Toss gently. Bake at 400°F (200°C) for 10-15 min., until golden. Meanwhile, toss 3 cups of washed, chopped romaine lettuce with your choice of store-bought or homemade dressing. Add ¼ cup grated Parmigiano-Reggiano cheese. Spoon the salad into your bread bowls, top with those crunchy croutons, and get ready to pack and dig in! No plates and no forks required (unless you want one). It’s all about the crunchy, creamy Caesar goodness in every bite.

Mexican-Inspired Corn Pasta Salad

This one requires a little bit of prep the day before, but trust us, it’s picnic gold! First, grill fresh corn on the cob for about 3 min. per side, or until kernels begin to turn golden brown and look charred. When all sides are browned, transfer to a plate to cool before cutting off the cob). Meanwhile, whisk together ¼ cup sour cream, ¼ cup mayonnaise, ¼ cup chopped cilantro, ½ tsp ancho chili powder, 2 tsp lime zest and 2 tbsp lime juice. Season the mixture with salt. Set aside. Cook ditali pasta (or the noodle shape of your choice) according to package directions. Toss hot pasta with dressing. Mix in corn, ⅓ cup crumbled Cotija or feta cheese, and garnish with fresh cilantro. Pop it into an airtight container and let it chill overnight. The next day, just grab it from the fridge, tuck it into your basket, and hit the road. Bold, bright, and totally worth the tiny bit of planning ahead!
