
Thai Curry & Herb Salmon Burgers

4 boneless, skinless salmon fillets (600 g), cut in 1-in. (2.5-cm) chunks
½ cup panko bread crumbs
¼ cup chopped fresh cilantro, packed roughly
¼ cup chopped fresh dill, packed roughly
1 tbsp Thai green curry paste
1 tbsp soy sauce
1 tsp vegetable oil
4 hamburger buns
sliced tomato, red onion and lettuce leaves (optional)

Directions
1In a food processor, combine salmon, panko, cilantro, dill, curry paste and soy sauce. Pulse until smooth. Shape salmon mixture into four patties. Set aside.
2Heat oil in a large non-stick skillet over medium-high heat. Cook patties until golden and cooked through, 2 to 3 min. per side.
3Serve patties sandwiched in buns with tomato, red onion and lettuce leaves, if using.
Tips
1
If you'd prefer to grill the burgers, preheat grill to medium. Place a large sheet of foil, folded in half and well-greased, onto the grill. Grill patties on foil for 2 to 3 min. per side.
