
Sweet Lime-Ginger Sauce for Tropical Fruit

½ cup sugar
3 walnut-size pieces fresh ginger, thinly sliced
2 tbsp honey
pinch of salt
zest of 1 lime
juice of 1 lime (about 2 tbsp/30 mL)

11. In small saucepan, place sugar, 1/4 cup (60 mL) water, ginger, honey and salt. Do not stir. Cover and bring to a simmer for 5 min. Remove from heat. Keep covered; let stand 15 min. Strain out and discard ginger. Cool sauce to room temperature. Mix in lime zest and juice. Serve immediately or chill up to 3 days.
22. Serve as a dipping sauce or dressing for tropical fruits like avocado, dragonfruit, guava, mango, papaya and passionfruit. For a tropical fruit salad, toss chopped pieces with dressing, plate and sprinkle with arugula, chopped almonds or peanuts and torn mint leaves.
