
Supreme Seafood Chowder

3 tbsp unsalted butter
2 celery stalks, finely diced
1 onion, finely diced
3 tbsp all-purpose flour
3 cups mL milk
1 bottle mL clam juice
2 yellow-fleshed potatoes, peeled and diced
1 ½ tsp mL salt
1½ lb fresh Supreme Seafood Mix (mix of cubed white fish and
salmon fillets, scallops and shrimp)4 tsp finely chopped chives
4 tsp finely chopped parsley

Directions
1Melt butter in large saucepan over medium heat. Add celery and onion. Cook, stirring often, about 4 min., until vegetables soften. Sprinkle in flour and cook 1 min., stirring. Gradually mix in milk and clam juice; dissolving flour into liquids.
2Add potatoes and salt. Bring just to a boil over high heat, stirring often. Reduce heat to low and simmer 5 to 7 min., or until potatoes are tender and chowder has thickened. Add seafood mix and continue to simmer, 5 min., or until seafood is just cooked through.
3Stir in chives and parsley just before serving. Serve chowder with crackers.
