Spinach & Peach Salad with Pecorino Cheese

3 tbsp chopped fresh basil
3 tbsp olive oil
4 tsp balsamic vinegar
1 tsp honey
¼ tsp salt
¼ tsp pepper
8 cups baby spinach
2.5 oz Pecorino-Romano cheese, shaved
2 ripe peaches, halved, pitted and sliced
3 tbsp chopped fresh basil
3 tbsp olive oil
4 tsp balsamic vinegar
1 tsp honey
¼ tsp salt
¼ tsp pepper
8 cups baby spinach
2.5 oz Pecorino-Romano cheese, shaved
2 ripe peaches, halved, pitted and sliced
Directions
1In a salad bowl, combine basil, oil, vinegar, honey, salt and pepper. Add spinach; toss to coat.
2Divide spinach mixture among 4 salad plates. Top with Pecorino-Romano cheese and peaches before serving.
