
Spiced Fish with Chip Topping BBQ Skillet

2 tbsp brown sugar
2 tbsp Sensations by Compliments Spirited Mickie Craft Beer Chipotle
BBQ sauce
2 tbsp apple cider vinegar
1 tbsp tomato paste
2 tsp creole or Cajun seasoning
4 skinless fillet pieces halibut, other white fish or salmon (5 oz/150 g each)
2 tbsp canola oil
½ cup Compliments potato chips, crushed (salt & vinegar, barbecue or all dressed flavour)

1 tbsp tomato paste
2 tsp creole or Cajun seasoning
4 skinless fillet pieces halibut, other white fish or salmon (5 oz/150 g each)
2 tbsp canola oil
½ cup Compliments potato chips, crushed (salt & vinegar, barbecue or all dressed flavour)
Directions
1Mix together brown sugar, BBQ sauce, vinegar, tomato paste and seasoning to make a glaze. Brush onto fish.
2Place a 9 in. (23 cm) cast-iron skillet in BBQ preheated to medium-high. Pour oil into skillet. Add fish, sauce-side up. Cook 3 to 5 min. Turn over. Brush with any remaining glaze. Close BBQ lid and cook another 3 min., or until fish starts to flake and internal temperature reaches 70 C (158 F). Sprinkle with crushed chips. Serve immediately.

Alternatively, cook fish on the stovetop or over a campfire grate.
