
Smoked Cheddar & Herb Popovers

¼ cup canola oil
4 large eggs
2 cups 2 % milk (or other dairy milk)
2 tbsp unsalted butter, melted
1 tbsp finely chopped thyme
1 tbsp finely chopped rosemary
2 tsp granulated sugar
2 tsp salt
½ tsp ground black pepper
2 cups all-purpose flour
¾ cup coarsely grated Panache Applewood Smoked Cheddar Cheese Aged 2 Years, divided
¼ cup canola oil

Directions
1Bring all ingredients to room temperature before starting. Preheat oven to 230°C (450°F). Spoon 1 tsp (5 mL) canola oil into each of 12 cups in popover pan(s). Preheat the pan(s) in the oven while making the batter.
2In a spouted bowl, whisk together the eggs, milk, melted butter, thyme, rosemary, sugar, salt and pepper. Add the flour in batches, mixing just until smooth.
3Carefully remove the popover pan(s) from the oven, being mindful of the hot oil (keep oven on). Pour batter to fill each cup about 2/3 full, then top with 1 tbsp (15 mL) of grated cheese.
4Return pan(s) to oven. Bake 15 min. until popovers are puffed up, then reduce the oven temp to 180°C (350°F) and bake another 15 min., until golden brown and crisp. (Tip: As tempting as it is, don’t open the oven door while popovers are baking!) Remove from oven; carefully lift out popovers from pan(s). Serve immediately while hot and puffed.

To add even more pop to your popovers drizzle with Hot Maple Syrup! Simmer 1 cup (250 mL) Compliments Organic Dark Maple Syrup with ½ tsp (2 mL) smoked paprika and ¼ tsp (1 mL) cayenne pepper (or more if desired) in a small saucepan over medium-high heat for 2 to 3 min. Remove from the heat; cool to room temperature before serving. Or store refrigerated in an airtight container.

Don’t own a popover pan? You can use a muffin tin, but the baking time may vary as it will hold a lower volume of batter. Just keep an eye on the bake as it may require less time.
