
Prosciutto & Melon Salad

8 cups mixed baby salad greens
16 to 20 thinly sliced wedges cantaloupe or honeydew
3.5 oz prosciutto slices, halved lengthwise
1 cup fresh blackberries
¼ cup shelled, unsalted pistachios
3.5 oz soft goat cheese or Gorgonzola cheese, crumbled into bite-size pieces
about 20 fresh mint leaves (optional)
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp warm honey
salt and cracked black pepper, to taste

Directions
1Divide the salad greens onto 4 plates.
2Arrange the melon, prosciutto and blackberries on top of the greens. Sprinkle with pistachios, cheese and mint leaves, if using.
3In small bowl, combine oil, vinegar, honey, salt and pepper. Drizzle onto salads just before serving.
