
AAA Prime Rib Roast with Steakhouse Potatoes & Mushrooms

1 Sobeys AAA Prime Rib Roast, bone-in or boneless, approx. 4-6 lb
2 lbs Yukon Gold or baby potatoes, scrubbed and quartered
1 lb cremini mushrooms, stems trimmed, halved if large
¼ cup olive oil
3-4 tbsp Matheson Food Company Beef Seasoning
Fresh rosemary sprigs, for garnish (optional)
Fresh parsley, chopped, for garnish (optional)

Directions
1Remove your Sobeys AAA Prime Rib Roast from the fridge for 1 hour before cooking. Pat the roast completely dry with paper towels. Drizzle the entire roast with about 1 tbsp of olive oil. Generously apply and massage in 2-3 tbsp of Matheson Food Company Beef Seasoning all over the roast – top, bottom, and sides. Let it sit at room temperature, allowing the seasoning to penetrate and the roast to come to temperature for more even cooking.
2Preheat your oven to 450°F (230°C). In a large bowl, toss the quartered potatoes and halved mushrooms with the remaining 3 tbsp of olive oil. Sprinkle 1 tbsp of Matheson Food Company Beef Seasoning over the vegetables. Toss thoroughly, making sure the potatoes and mushrooms are well-coated with that straightforward, robust flavour.
3Heat a large, oven-safe skillet (cast iron works best) over medium-high heat until very hot. Carefully place the seasoned prime rib roast in the hot skillet, fat side down first, and sear for 3-4 minutes per side, until a deep golden-brown crust forms.
4Transfer the seared roast to a large roasting pan or keep it in the oven-safe skillet. Arrange the seasoned potatoes and mushrooms around the roast in the pan. Place the entire pan in the preheated 450°F (230°C) oven and roast for 15 minutes.
5After 15 minutes, reduce the oven temperature to 325°F (160°C). Continue to roast, turning the potatoes and mushrooms once halfway through, until the prime rib reaches your desired internal temperature. Use a meat thermometer inserted into the thickest part of the roast, avoiding the bone:
- Medium-Rare: 145°F (63°C)
- Medium: 160°F (71°C)
- Well Done: 170°F (77°C)
- Approximate cooking times for 4-6 lb roast: 1.5 - 2.5 hours for medium-rare, 2.5 - 3 hours for medium.
6Once the roast reaches your desired temperature, remove it from the oven. Transfer the prime rib to a cutting board and tent loosely with foil for at least 20-30 minutes. This is crucial for juicy, tender meat. The potatoes and mushrooms can stay warm in the turned-off oven or be transferred to a serving dish.
7Slice the rested prime rib against the grain into thick, impressive slices. Arrange on a platter with the beautifully roasted potatoes and mushrooms. Garnish with fresh rosemary and parsley if desired. Serve immediately and watch your guests marvel at the classic steakhouse flavour!
