
Potato-Cauliflower Mash with Goat Cheese

4 cups peeled and diced white potatoes
3 cups small cauliflower florets
4 oz herbed goat cheese
1 tsp salt, or to taste

Directions
1In large saucepan, cover potatoes with cold salted water. Bring to a boil; simmer 15 to 20 min., or until tender. Meanwhile, bring another saucepan of salted water to boil for the cauliflower. Add cauliflower; simmer 10 min. or until tender.
2Drain both the potatoes and cauliflower, keeping them in their saucepans.
3Roughly mash the potato. Add the cauliflower into the saucepan of potato. Mash until the potato-cauliflower mixture is to preferred texture.
4Stir in cheese, salt and pepper. Serve mash as is or transfer to a 13 X 9-in. (3-L) baking dish. Bake in preheated 180°C (350°F) oven for about 20 min., until lightly golden.
