10 oz top sirloin steak or top sirloin medallions, thinly sliced
½ tsp garlic powder
½ tsp onion powder
1 tbsp vegetable oil
1 large onion, halved and thinly sliced
1 green pepper, julienned
salt and pepper to taste
4 sausage buns (or 5-in./12-cm sandwich rolls)
3 tbsp unsalted butter
6 oz sliced Provolone, approx. 8 slices
4 tsp Dijon mustard (optional)

6 oz sliced Provolone, approx. 8 slices

Directions
1In bowl, toss together beef, garlic powder and onion powder. Set aside.
2In large skillet, over medium-high heat, add oil, onion and green pepper. Cook, stirring, until beginning to soften, approx. 5 min. Stir in the beef, salt and pepper, and cook until beef is medium doneness, about 3 min. Remove from heat.
3Preheat broiler. Slice open buns and place, cut-side up, on baking sheet. Spread butter on buns. Place 1/4 of the beef mixture on one side of each bun. Top each with 1/4 of the cheese.
4Broil until cheese is bubbly and golden, and buns are lightly toasted, about 2 min. Spread each bun with mustard (if using) and close buns to serve.
Tips
1
Toss sliced beef with garlic powder and onion powder, place in resealable plastic freezer bag and freeze up to 1 month. Thaw in refrigerator when ready to use.
