4 tsp grainy mustard
2 tsp brown sugar
2 bunches radishes, tops trimmed
2 tbsp olive oil, divided
¼ tsp each salt and pepper, divided
½ lb snow peas, trimmed
lemon wedges (optional)
Directions
1Spread mustard on top of each salmon fillet and sprinkle with brown sugar. Place on baking sheet lined with parchment paper. Set aside.
2In bowl, toss radishes with half of each of the olive oil, salt and pepper (reserve the bowl). Arrange radishes in a single layer on second baking sheet. Roast in a preheated 425°F (220°C) oven 18 to 20 min., or until tender-crisp.
3Meanwhile, roast salmon 7 to 9 min., or until fish is cooked through and starts to flake.
4Also, in reserved bowl, toss snow peas with remaining oil, salt and pepper. Add snow peas to radishes on baking sheet in last 2 to 3 min. cooking time and roast until tender-crisp. Serve salmon with roasted radishes, snow peas and lemon wedges, if desired.
Tips
1
If radishes are large, halve or quarter before roasting.
