½ cup vanilla ice cream, softened
½ cup finely chopped toasted pistachios

½ cup vanilla ice cream, softened
½ cup finely chopped toasted pistachios
Directions
1Separate cookies by gently twisting them apart. Scoop 1 tbsp (15 mL) ice cream on top of 8 halves, spreading ice cream evenly. Cap with remaining cookie halves. Roll ice cream exposed on sides in chopped pistachios.
2To avoid melting, freeze each cookie sandwich as it is completed. Leave batch in freezer 1 hr. to firm up.

Roll sides of ice cream sandwiches in your choice of sprinkles, nuts, flaked coconut or chopped chocolate.
