
Grilled Lamb Chops with Homemade Mint Sauce

For the mint sauce:
⅓ cup chopped fresh mint
½ cup red wine vinegar
1 garlic clove, chopped
3 tbsp sugar
¼ tsp salt, or to taste
½ tsp freshly cracked black pepper, or to taste
For the lamb:
8, 3oz lamb chops, trimmed of excess fat
1 tbsp olive oil
1 tbsp chopped fresh mint
¼ tsp salt, or to taste
½ tsp fresh cracked black pepper, or to taste
For the mint sauce:

For the lamb:
8, 3oz lamb chops, trimmed of excess fat

Directions
1Preheat the barbecue or indoor grill to medium-high heat. Place the mint sauce ingredients in a small pot and bring to a boil. Reduce the heat to lowest setting and let the flavours meld together until the lamb is cooked. Brush the lamb with olive oil and then sprinkle with mint, salt and pepper. Grill 3-4 minutes per side, or until desired doneness is achieved. Serve the lamb with a small cup of the mint sauce alongside.
Tips

A collection of spring-style vegetables would nicely accent the lamb, such as a mix of snow, snap and green peas flavoured with mint; steamed carrots with the tip of the green tops attached; and mini new potatoes flavoured with butter and chives.
