
Greek-Style Smashed Burger Tacos

For tzatziki:
1⁄2 English cucumber, halved lengthwise, seeds scooped out
1⁄4 tsp salt
1 1⁄2 cups 5% Greek yogurt
2 tsp finely chopped dill
1 small garlic clove, finely grated
For tacos:
4 Compliments Smash Burgers
6 original Tortillas 7-in, warmed
3⁄4 cups crumbled Feta cheese
1⁄2 English cucumber, diced
1⁄2 small red onion, thinly sliced
3⁄4 cup cherry tomatoes, quartered
1⁄2 cup Kalamata olives, pitted and torn
mint leaves and lemon wedges to garnish

Directions
1Preheat a clean, oiled grill to medium-high.
2To prepare tzatziki, coarsely grate cucumber then toss with salt in a medium bowl to combine. Let stand until additional liquid draws out, 10 min.
3Carefully pour off excess liquid from cucumbers, if needed, then scrape into a clean kitchen towel. Wring out to remove as much liquid as possible. Transfer to a clean medium bowl, then stir in yogurt, dill and garlic to combine. Cover with plastic wrap and refrigerate.
4To prepare tacos, grill burger patties from frozen, with the lid closed, 5 to 7 min per side or until burgers reach an internal temperature of 160°F (71°C). Set aside.
5Smear each tortilla with tzatziki. Slice each burger in half, then place two halves in the centre of each. Top with feta cheese, cucumber, onion, tomatoes and olives. Garnish with mint. Fold over to serve with lemon wedges.
