
The Canadian Maple-Bacon Burger

1 tbsp vegetable oil, plus more for brushing
6 slices peameal bacon, back bacon or maple bacon
4 brioche or kaiser buns
1 lb medium-lean ground pork
¾ cup sharp cheddar cheese, grated
1 tbsp Montreal steak spice
1 tbsp maple syrup
1 tbsp Dijon mustard
4 slices marbled or sharp cheddar cheese
Maple-Bacon Mayonnaise
½ cup mayonnaise
1 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp lemon juice
1 garlic clove, finely grated
Toppings
1 heirloom tomato, sliced
2 dill pickles, thinly sliced lengthwise
4 leaves lettuce
¼ cup store-bought maple onion jam

Maple-Bacon Mayonnaise
½ cup mayonnaise
1 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp lemon juice

1 heirloom tomato, sliced
2 dill pickles, thinly sliced lengthwise
4 leaves lettuce
¼ cup store-bought maple onion jam
Directions
1Burgers: Brush a large non-stick skillet with a thin layer of vegetable oil. Add the bacon and cook over medium heat until brown on both sides. Drain on a plate lined with paper towels. On a work surface, finely chop two slices of bacon and set aside in a bowl. Keep the remaining whole slices warm. Remove all but a thin layer of bacon fat from the skillet as needed.
2In the same skillet over medium-heat, toast the inside of the buns in the bacon fat. Set aside and keep warm.
3Meanwhile, in a large bowl, combine the ground pork, grated cheese, steak spice, maple syrup and Dijon. Season with salt and pepper. With slightly wet hands, shape the meat mixture into 4 patties. Place on a plate.
4In the same skillet over medium heat, brown the patties in the oil for 4 to 5 minutes on each side or until cooked through. In the last minute of cooking, top each patty with a slice of cheese. Remove the skillet from the heat.
5Maple-Bacon Mayonnaise: Add all of the ingredients to the bowl of chopped bacon. Season with salt and pepper.
6Toppings: Spread the maple-bacon mayonnaise over the inside of the toasted buns. Top the bun bottoms with the patties, bacon, sliced tomatoes, pickles and lettuce. Spread the onion jam over the bun tops and place over the burgers. Serve with ketchup chips, if desired.
