
Sweet & Smoky Glazed Pork Belly Bites with Asian-Style Slaw

Asian-Style Slaw:
3 cups shredded green cabbage
1 cup shredded red cabbage
1 large carrot, shredded or julienned
2 green onions, thinly sliced
¼ cup rice vinegar
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp Matheson Food Company Sweeter Seasoning
1 tsp grated fresh ginger (optional)
Pinch of red pepper flakes (optional)

Asian-Style Slaw:

Directions
1Preheat oven to 375°F (190°C). If your pork belly has skin, score it deeply but not all the way through, then pat it very dry. Cut the pork belly into roughly 1-inch (2.5 cm) cubes.
2In a large bowl, drizzle the pork belly cubes with 1 tbsp of olive oil. Now, sprinkle 2 tbsp of Matheson Food Company Sweeter Seasoning over the cubes. Toss thoroughly, ensuring every piece is coated. This initial layer of Sweeter seasoning will start to build that amazing sweet and savoury foundation.
3Spread the seasoned pork belly in a single layer on a foil-lined baking sheet. Bake for 30 minutes.
4Asian-Style Slaw: While the pork belly is baking, combine all the slaw ingredients in a large bowl. Toss well and set aside to allow the flavours to meld.
5After 30 minutes, remove the pork belly from the oven. At this point, the fat will have rendered, and the cubes will be starting to crisp. Lightly sprinkle the pork belly with an additional 1 tbsp of Matheson Food Company Sweeter Seasoning, tossing gently to coat.
6Return the pork belly to the oven and continue baking for another 15-30 minutes, or until the pork belly is deeply golden brown, crispy on the edges, and incredibly tender. Keep an eye on it to prevent burning.
7Once the pork belly is cooked and glazed, remove it from the oven. Let cool for a minute or two. Serve the hot, crispy, sweet & smoky pork belly bites immediately alongside your fresh, tangy Asian-Style Slaw. Garnish with toasted sesame seeds and extra green onions if desired. Get ready for applause!
