
Dragon Fruit Splash Mocktail

This refreshing dragon fruit splash mocktail is bright, colourful and delicious. It is made with fresh dragon fruit, iced tea, mango nectar and sparkling water.
1 ripe red dragon fruit, divided
1 lime, divided
1 cup white grape juice
½ cup green iced tea with ginseng and honey
¼ cup mango nectar
1 tbsp liquid honey
½ cup Panache Sparkling Water
2 mint leaf sprigs, for garnish

Directions
1Cut a 1/2” (1 cm) thick slice from the center of the red dragon fruit, then cut the slice in half, set aside for garnish. Cut 2 x ¼” (1/2 cm) round slices from the center of the lime, set aside for garnish.
2Combine ½ cup (125 ml) (115g) of the remaining red dragon fruit flesh with the white grape juice, green iced tea, mango nectar, honey and 1 tbsp (15 ml) (11g) of the remaining lime juice in a blender. Process until smooth.
3Fill two glasses with ice. Pour the dragon fruit blend over the ice, dividing evenly between the glasses. Top with Panache Sparkling Water and stir gently to swirl the colours if desired.
4Garnish each drink with a reserved dragon fruit wedge, reserved slice of lime and fresh mint leaves. Serve immediately.
