
Dragon Fruit Compote

5 cups peeled and chopped dragon fruit (about two large)
4 large strips lemon zest
¼ cup lemon juice
1 cinnamon stick
1 tbsp minced fresh ginger
4 cardamom pods

Directions
1Combine dragon fruit, lemon zest, lemon juice, cinnamon stick, ginger and cardamom pods in saucepan set over medium-high heat; bring to a boil. Reduce to medium heat.
2Simmer 15 to 20 min., stirring frequently to prevent scorching, until liquid is syrupy. Discard whole spices and lemon zest. Stir in sugar; simmer 8 to 10 min. until thickened.
3Ladle compote into two 1-cup (250-mL) Mason jars and cool completely. Seal with lids and refrigerate 8 hr. until set. Enjoy immediately or store refrigerated up to 2 weeks. Decorate with festive ribbons or strings and tags.
Tips

Serve compote over ice cream, cakes and waffles. Also delicious served with roast pork or duck.
