
Cumin-Spiced Pork Skewers with Apricot Mustard Dipping Sauce

18 wooden skewers (metal skewers optional)
6 boneless pork loin centre chops (approx. 1 1/4 lb/625 g total), each cut into 3 strips
1 tsp Roasted Garlic Seasoning Paste
1 tsp Ginger Seasoning Paste
1 tsp ground cumin
1 ½ tsp salt
2 tsp olive oil, divided
⅓ cup apricot jam
⅓ cup whole grain Dijon mustard
1 tsp chopped fresh rosemary

6 boneless pork loin centre chops (approx. 1 1/4 lb/625 g total), each cut into 3 strips

1 tsp Ginger Seasoning Paste
1 tsp ground cumin
1 ½ tsp salt
2 tsp olive oil, divided
⅓ cup apricot jam
⅓ cup whole grain Dijon mustard
1 tsp chopped fresh rosemary
Directions
1Place wooden skewers in water. Set aside. Preheat oven to broil and place rack in centre of oven. Place pork strips in a bowl. Coat with the pastes, cumin, salt and 1/2 tsp (2 mL) olive oil. Marinate, 10 min.
2Insert skewers through the length of each pork strip. Place on a rimmed baking sheet and drizzle with remaining oil. Broil 5 to 7 min. or until cooked through and lightly golden.
3Meanwhile, in a bowl, stir together jam, mustard and rosemary. Serve with warm pork skewers.
