
Chopped Smoked Salmon on Bannock

Bannock:
2 cups all purpose flour
1 tbsp sugar
2 tsp baking powder
1⁄2 tsp salt
1⁄2 tsp instant yeast
3⁄4 cup water, warm
1 tbsp vegetable oil, plus more for frying
Smoked salmon:
12 oz smoked salmon
4 Lebanese cucumbers
4 hard-boiled eggs
1⁄2 cup cream cheese
4 slices red onion
4 tsp mayonnaise, plus more if needed
4 tsp capers
4 tsp Everything Bagel Seasoning
4 sprigs fresh dill
8 large lettuce leaves
salt and pepper to taste
Bannock:

Directions
1Bannock: In a medium bowl, add the flour, sugar, baking powder, salt and yeast and mix to combine. Make a well in the center of the dry ingredients and add the water and oil.
2Using a fork, begin mixing from the center out until and shaggy dough is formed and there are no dry spots of flour
3Transfer the dough to a lightly floured work surface and gently knead until the dough is well mixed and bounces back to touch, about 1 minute
4Cover the dough and let rest 15 minutes
5Meanwhile, in a deep frying pan or skillet, heat 1” of oil to 350ºF (175ºC)
6Divide the dough into four equal pieces and shape into ovals about 8” long and 3” wide using a rolling pin. Carefully transfer the bread to the frying pan without overcrowding them. You might need to fry them in two batches
7Flip the bannock when one side is golden brown, about 2 minutes.
8Fry until all sides are golden, about 5 minutes total.
9Transfer to a paper-towel-lined baking sheet and let cool.
10Smoked Salmon: On a large cutting board, place the smoked salmon, cucumbers, eggs, cream cheese, red onion, mayonnaise, capers, Everything Bagel Seasoning and dill
11Using a knife, begin chopping the ingredients together until they form a uniformly chopped mixture. If the mixture is too dry, add some mayonnaise
12Season to taste with salt and pepper
13On a work surface, cut the bannock in half horizontally without going all the way through to the other side.
14Open them like a book and place a lettuce leaf on each half. Cover the insides with the chopped mixture. Serve immediately.
