1 Cedar plank
1 Roasted Garlic Bruschetta Topping
1 Brie Double Creme Cheese
1 Green onion, thinly sliced diagonally
1 First Cold Pressed Extra Virgin 100% Olive Oil
1 Water crackers
Directions
1Soak cedar plank in water for 3 to 4 hours; weight down to hold underwater.
2Preheat barbecue to medium-high.
3Drain bruschetta topping in a sieve. Slice thin layer of rind off top of cheese.
4Place cedar plank on grill, close lid until you see smoke, about 3 to 4 minutes. Spoon bruschetta topping over cheese. Open lid and carefully place cheese on cedar plank. Close lid and cook until cheese begins to melt, about 12 minutes. Do not leave barbecue while cheese is heating. Carefully transfer smoking plank to a heatproof surface.
5Sprinkle cheese with green onions and drizzle with olive oil. Serve warm with crackers.
Tips
1
Soaking the plank in fruit juice, beer or wine instead of water will add a different flavour and aroma to your planking. Also, have a large baking tray filled with 1/4-inch (5 mm) of water close to barbecue. Carefully set plank in water to quickly extinguish any flames. Add plank soaking time (3 to 4 hours) to total time.
