
Campfire Shrimp Boil Packets

4 squares 18” aluminum foil
4 squares 16” parchment paper
2 cobs corn
16 Mini potatoes, halved
1 ¼ cups red bell pepper diced
1 cup red onion, diced
¼ cup garlic butter
2 smoky sausages, ½” slices
raw easy peel shrimp
2 tsp old bay seasoning
pinch salt
pinch pepper
1 lemon, cut into quarter wedges
¼ cup parsley, chopped

4 squares 16” parchment paper

Directions
1Lay out the squares of aluminum foil on a clean surface and set a square of parchment paper in the center of each, set aside.
2Cut the cobs of corn into quarters and then split each in half down the center vertically. Divide the corn evenly between the foil packets placing it in the center of each square.
3Divide the halved potatoes, diced red pepper, diced red onion, sliced sausages and shrimp evenly between the foil packets. Top each with 1 tbsp garlic butter, then season each packet with ½ tsp of old bay seasoning, along with a pinch each of salt and pepper.
4To form the packets, bring together the short edges of the foil, crimping around all the edges to seal them tightly. Cook the packets on the grill over your campfire or bbq, until puffed and cooked through, about 30-35 mins.
5Remove the shrimp boil packets from the heat and let cool slightly. Gently open the foil packets, dress with a squeeze of lemon and garnish with chopped parsley.
