
Campfire Potato Packets with Bacon & Onion

1 pkg (2 lb/907 g) Compliments Red Petites Potatoes
1 small onion, diced
½ pkg Compliments Naturally Smoked Fully Cooked Bacon, 50% Less Salt, finely chopped
2 tsp Compliments Steak Spice Seasoning
1 tsp Compliments Paprika
4 tsp canola oil
1 pkg (2 lb/907 g) Compliments Red Petites Potatoes
1 small onion, diced
½ pkg Compliments Naturally Smoked Fully Cooked Bacon, 50% Less Salt, finely chopped
2 tsp Compliments Steak Spice Seasoning
1 tsp Compliments Paprika
4 tsp canola oil
Directions
1Cut small potatoes in half and larger ones in quarters. Mix potatoes, onion and bacon in large bowl or plastic container. Lay out 4 large sheets of foil. Scoop equal portions of potato mixture onto foil pieces. Draw up foil and seal packets tightly.
2Place on grate over hot fire and cook 30 to 35 min. or until potatoes are cooked through. To test for doneness, remove packet from heat, carefully open packet (watching out for steam) and pierce potato with a knife. Potatoes are done when knife easily pierces through potato. Reseal packet and return to fire if necessary.
Tips
1
To prevent burning, avoid placing packets directly over high flames. Wait until your fire settles before placing them on the grate.
