
Campfire Potato Packets with Bacon & Onions

1 (2 lb/907 g) Red Petites Potatoes
1 small onion
½ Naturally Smoked Fully Cooked Bacon, 50% Less Salt
2 Steak Spice Seasoning
1 Paprika
4 canola oil

Directions
1At Campfire
2Cut small potatoes in half and larger ones in quarters, chop onion, finely chop bacon and place in large bowl. Mix all ingredients in a large bowl or plastic container. Lay out 4 large sheets of foil. Scoop equal portions of potato mixture onto foil pieces. Draw up foil and seal packets tightly.
3Place on grate over hot fire and cook 30 to 35 min. or until potatoes are cooked through. To test for doneness, remove packet from heat, carefully open packet (watching out for steam) and pierce potato with a knife. Potatoes are done when knife easily pierces through potato. Reseal packet and return to fire if necessary.
Tips
1
To prevent burning, avoid placing packets directly over high flames. Wait until your fire settles before placing them on the grate.
