3 cups restaurant style tortilla chips
2 cups triple shredded cheese blend
½ cup pinto beans or black beans, drained and rinsed
1 vine-ripe tomato, chopped
1 avocado, sliced
1 Small jalapeno, thinly sliced
lime wedges (optional)

Directions
1Tear a large rectangle of aluminum foil to fit a cast iron skillet or baking tray. Arrange the centre with a layer of tortilla chips, cheese, beans, tomatoes, avocados and jalapenos. Repeat this with tortilla chips, cheese, beans, and more cheese. Fold over to seal.
2Cook over a campfire set over medium heat until the cheese is melted, 5 to 8 minutes. Carefully open the packet and garnish with avocado, jalapenos and hot sauce.

This is a customizable meal, serve it with cut-up campfire hotdogs or sausages, and a fried egg. Make individual packets to make it your own, a “choose your adventure meal.
