
Caesar Cocktail with Hot Honey Bacon Twists

Try this Caesar cocktail recipe topped with hot honey bacon twists. Made with Clamato, vodka, spices, and more, it's a savoury, spicy Canadian favourite!
3 cups Compliments Clamto Juice
½ cup vodka
2 tsp hot sauce
2 tsp pickled green bean brine
2 tsp Worcestershire sauce
¼ tsp freshly ground pepper
2 tbsp celery salt
1 lime, cut into 4 wedges
4 young leafy celery stalks
4 pickled green beans
4 thyme sprigs

2 tsp hot sauce
½ tsp dried hot chili flakes
½ tsp smoked paprika
½ tsp freshly ground pepper
½ tsp fresh thyme leaves
8 strips Compliments thick sliced bacon

Hot Honey Bacon Twists
2 tbsp honey
2 tsp hot sauce
½ tsp dried hot chili flakes
½ tsp smoked paprika
½ tsp freshly ground pepper
½ tsp fresh thyme leaves
8 strips Compliments thick sliced bacon
Directions
1Preheat oven to 375°F (190°C). To make the cocktail drink, in a large measuring cup or pitcher, combine the clamato juice, vodka, hot sauce, pickled green beans brine, Worcestershire Sauce and black pepper (set aside drink garnishes for later use). Chill cocktail while making bacon twists.
2Set out a baking pan fitted with a wire rack (line bottom of pan with parchment paper to catch drips). In a small bowl, mix the honey, hot sauce, chili flakes, smoked paprika, black pepper and thyme leaves into a glaze; brush onto both sides of bacon strips.
3Tightly twist each bacon strip from end to end into a long thin corkscrew. Lay the twists on the baking rack; brush tops with any remaining glaze. Bake for 20 minutes then gently turn over and bake for another 5 to 10 minutes, or until golden and crisp. Set aside to cool. (Tips: While the glaze is still moist, sprinkle with additional chili flakes, black pepper and thyme leaves, if desired. Cooled twists can be stored in an airtight container and refrigerated up to 2 days before reheating briefly at 350°F/190°C to re-crisp.)
4To assemble Caesars, moisten the rim of 4 highball glasses with a lime wedge. Spread the 2 tbsp (30 mL) celery salt in a small dish; dip in glass rims to coat. Adjust spice level of the chilled cocktail drink with more hot sauce and pepper, if desired.
5Drop a few ice cubes and a lime wedge into each glass. Stir the chilled cocktail and divide among the glasses. Insert a celery stalk, pickled green bean, sprig of thyme into each drink and lay 2 bacon twists across the rim. Serve immediately. Enjoy!
