
Blackened Pork Chops & Charred Cajun Onions

2 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp ground cumin
½ tsp dried oregano
½ tsp dried thyme
¼ tsp pepper
pinch cayenne pepper
4 bone-in pork chops (about 6 oz/175 g each)
Charred Cajun Onions:
1 pkg Sliced Red Onions, sliced into 1/2-in. (1-cm) thick rings
2 tbsp olive oil, divided
2 tsp apple cider vinegar
pinch sugar
2 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp ground cumin
½ tsp dried oregano
½ tsp dried thyme
¼ tsp pepper
pinch cayenne pepper

Charred Cajun Onions:
1 pkg Sliced Red Onions, sliced into 1/2-in. (1-cm) thick rings
2 tbsp olive oil, divided
2 tsp apple cider vinegar
pinch sugar
Directions
1To make Cajun seasoning, mix paprika, garlic powder, onion powder, salt, cumin, oregano, thyme, black pepper and cayenne pepper. Reserve 1 tbsp (15 mL) of seasoning for onions. Season pork chops with remaining mixture.
2Grill chops on barbecue preheated to medium-high heat, 6 to 8 min. per side, until 160°F (71°C) on meat thermometer is reached at thickest part of chop, or until meat is cooked and juices run clear.
3Meanwhile, brush onion rings with 1 tbsp (15 mL) oil. Season with 2 tsp (10 mL) Cajun seasoning. Barbecue on grill preheated to medium-high, 3 to 5 min. per side, or until onions are charred and tender. Transfer onions to small bowl and toss with apple cider vinegar, sugar, remaining oil and remaining Cajun seasoning. Serve with pork chops.
