1 cup finely chopped hazelnuts
½ cup sunflower seeds
⅓ cup flax seeds
⅓ cup hemp seeds
⅓ cup sesame seeds
½ cup peanut butter (or other seed or nut butter)
¼ cup maple syrup
½ tsp vanilla extract
pinch of salt
1 cup shredded unsweetened coconut
1 cup finely chopped hazelnuts

1 cup shredded unsweetened coconut
Directions
1Line large baking sheet with parchment paper. In large bowl, mix together hazelnuts, sunflower seeds, flax seeds, hemp seeds, sesame seeds, peanut butter, maple syrup, vanilla and salt until blended. In a separate small bowl, pour in the shredded coconut.
2Roll the seed mixture into thirty 1-in. (2.5-cm) diameter balls; toss in coconut to coat. Place bites on prepared baking sheet. Chill 1 hr., or until firm. Store refrigerated in airtight container up to 3 days or freeze for up to 1 month.
Tips

If mixture is too sticky, wet hands lightly before rolling into balls.

Try adding chopped dried fruits, such as apricots, cherries and plums.
