
Beef & Cauliflower Skillet Curry with Couscous

1 tbsp olive oil
1 lb sirloin tip steaks, cut into 1/2-in.(1-cm) cubes
2 tbsp mild curry paste
1 onion, diced
2 cloves garlic, minced
¼ cup orange juice
1 can diced tomatoes
½ lb green beans, trimmed (approx. 1 cup/250 mL)
3 cups small cauliflower florets
½ tsp salt
2 tbsp chopped fresh cilantro
1 cup regular or whole-wheat couscous, cooked according to package directions

Directions
1Heat oil in large skillet set over medium heat. Add beef and curry paste, sauté 2 to 3 min. Add onion and garlic. Cook until beef is browned on all sides and onion has softened, approx. 5 min.
2Stir in orange juice, scraping up browned bits on bottom of skillet. Add diced tomatoes and bring to a simmer for 20 min. Stir in green beans and cauliflower. Cover and cook 8 min., or until vegetables and beef are tender.
3Stir in salt and cilantro. Serve with couscous.
Tips
1
Use mild, medium or spicy curry powder depending on your desired spice level. Also delicious with basmati rice.
