
Beef & Broccoli

1 lb flank steak or skirt steak, cut into ¼-inch thick strips
¼ cup Compliments Soy Sauce, divided
3 tbsp Shaoxing wine or dry sherry, divided
2 tsp Compliments Cornstarch
⅓ cup Compliments Chicken Broth Less Sodium
3 tbsp oyster sauce
2 ½ tsp granulated sugar
1 tsp sesame oil
3 cloves garlic, minced
2 tsp minced ginger
4 green onions
¼ cup Compliments Vegetable Oil
1 head broccoli, florets separated and stems thinly sliced (5 cups)
1 tsp toasted Compliments Sesame Seeds

Directions
1In a bowl, combine beef, 1 tbsp of the soy sauce, 1 tbsp of the Shaoxing wine and toss to coat. Refrigerate and marinate for at least 20 minutes.
2In a separate bowl, stir together the remaining 3 tbsp soy sauce with cornstarch until combined. Stir in the remaining 2 tbsp Shaoxing wine, chicken stock, oyster sauce, sugar and sesame oil.
3Finely chop the green onions, separating the white and green parts. In a small bowl, combine garlic, ginger and white parts of the green onion.
4Heat a wok or large skillet over high heat. Add 1 tbsp of the oil until shimmering. Add half of the beef and cook, without moving to sear, about 1 minute. Cook, stirring until slightly pink, about 45 seconds. Transfer to a plate. Repeat with 1 tbsp of oil and the remaining beef. Wipe out wok.
5Add 1 tbsp of the oil until shimmering; add half the broccoli and cook, stirring until tender-crisp, about 1 minute. Repeat with 1 tbsp oil. Return the beef and add the garlic mixture with white parts of green onion; cook, stirring for 30 seconds. Stir the soy sauce mixture and add to the wok. Cook, stirring until sauce is slightly thickened, about 1 minute.
6Transfer to a platter and sprinkle with sesame seeds.
