Tuscan Bean & Pasta Toss

Ingredients

  • 6 cups cooked short pasta such as fusilli or penne 1.5 L
  • 4 cups packed baby spinach 1 L
  • 1 can Six Bean Blend, drained and rinsed 540 mL
  • 1/3 cup pesto 75 mL
  • 1/4 cup sundried tomatoes, blanched and thinly sliced 60 mL
  • 5 tsp finely grated lemon zest 5 mL
  • 1 tbsp fresh lemon juice 15 mL
  • 1/4 tsp hot pepper flakes (optional) 1 mL
  • 1/2 cup Italian Style Shredded Cheese Blend 125 mL

Directions

  • Step 1

    Toss hot pasta with spinach, beans, pesto, sundried tomatoes, lemon zest, lemon juice and hot pepper flakes (if using). Transfer to a serving bowl and sprinkle with shredded cheese. Serve immediately.
