Tuna, Caper & Fresh Tomato Linguine

Ingredients

  • 12 oz linguine 340 g
  • 2 cups halved cherry tomatoes 500 mL
  • 1/3 cup sliced black olives, drained 75 mL
  • 1/4 cup chopped parsley 60 mL
  • 3 tbsp olive oil 45 mL
  • 2 tbsp capers, drained 30 mL
  • 1 clove garlic, minced
  • 1/4 tsp salt 1 mL
  • pinch hot pepper flakes (optional)
  • 1 can Solid White Albacore Tuna in Water, drained 170 g

Directions

  • Step 1

    Cook linguine according to package directions, reserving 1/3 cup (75 mL) pasta water.

  • Step 2

    Meanwhile, stir tomatoes with black olives, parsley, oil, capers, garlic, salt and hot pepper flakes (if using) until combined. Stir in tuna then toss with pasta and pasta water.
