Chermoula Sauce:

cilantro leaves (about 2 large bunches)

Steak Seasoning:

Sterling Silver rib steaks, 1 to 1½ inch (2½ to 3¾ cm) thick

pomegranate seeds

Step 1

Preheat your grill at medium-high heat. Clean and oil the grates.

Step 2

Chermoula Sauce: Combine cilantro with parsley, lemon juice, garlic, cumin seeds, paprika, coriander seeds, salt and cayenne in a food processor. Process until combined. While motor is running, gradually pour in ⅓ cup oil through the spout. Don’t over-process–the sauce should have some texture. Add more oil or salt to taste, if desired. Scrape into a medium bowl and set aside.

Step 3

Steak Seasoning: Combine all ingredients in a large bowl. Add steaks. Rub seasoning all over steaks.

Step 4

Grill steaks until cooked to 63°C (145°F) on an instant-read thermometer for medium-rare, 2 to 3 mins. per side, or to desired doneness. Transfer steaks to a cutting board and let rest for 5 mins.

Step 5

Slice steak, then arrange on plates. Dollop 2 tbsp Chermoula Sauce overtop steak. Sprinkle with pomegranate seeds.
