Slow Cooker Five Fruit Medley Rice Pudding

Ingredients

  • 1 1/4 cups Calrose rice 310 mL
  • 3 eggs
  • 1 cup sugar 250 mL
  • 4 cups milk 1 L
  • 2 tsp vanilla extract 10 mL
  • 1 tsp ground cinnamon 5 mL
  • 1 cup Compliments Five Fruit Medley or similar dried fruit mix 250 mL

Directions

  • Step 1

    Place rice in slow cooker. In a bowl, beat together eggs, sugar and 1/2 cup (125 mL) water until sugar is dissolved; pour into slow cooker. Stir milk, vanilla, cinnamon and fruit into rice mixture. Cover and cook on LOW setting for 3 hours; or until ice is soft and fruit is tender.
