Lay the half slices of prosciutto on a large work surface. Set a slice of mango at one end of each slice of prosciutto. Divide the goat cheese into 12 portions, and top each mango slice with a portion of cheese. Roll the prosciutto around the mango and cheese.
To serve, place prosciutto-wrapped bites on a platter. Drizzle with balsamic vinegar and sprinkle with chives.
