Ingredients

Compliments Gingersnap Cookies, crushed
1 cup
vanilla Greek yogurt
250 mL
1 tsp
pure vanilla extract
5 mL
1/4 tsp
each ground cinnamon and ground cardamom
1 mL
1/4 tsp
fresh orange zest
1 mL
1/4 cup
mixed berry or raspberry jam
60 mL
1/2 cup
pomegranate seeds
125 mL

Directions

Step 1
Whisk together the yogurt, vanilla, spices and orange zest.
Step 2
Measure out the jam into a small bowl and stir well until smooth.
Step 3
Create parfaits in each glass by layering the ingredients starting with 1 tbsp crushed gingerbread cookies, 2 tbsp yogurt mixture, 1 tsp of jam, and 1 tbsp of pomegranate seeds. Add 2 more tbsp of yogurt, 1 tsp of crushed cookies, 1 tsp jam and 1 tbsp pomegranate seeds.
Step 4
Serve immediately.

Tip

Yogurt mixture can be made the day before and kept in the fridge until ready to use. Crushed cookies and pomegranate seeds can also be prepped a day ahead and stored in separate airtight containers in the fridge.
