
Oat Biscuits with Cheddar & Chives

1 ⅓ cups all-purpose flour, plus more for dusting
⅔ cup quick oats, plus more for dusting biscuit tops
½ tsp salt
¼ tsp ground cayenne pepper
1 tbsp sugar
2 tsp baking powder
1 tbsp finely chopped fresh chives
⅔ cup shredded old Cheddar cheese, loosely packed
¼ cup cold unsalted butter, in small pieces
⅔ cup buttermilk, plus a bit more forbrushing biscuit tops

Directions
1Preheat oven to 425°F (220°C). Combine flour, oats, salt, cayenne pepper, sugar and baking powder in a bowl and mix well. Add chives and Cheddar and toss until evenly distributed.
2With two knives or cool fingertips, mix in butter lightly until mixture resembles coarse meal. Add buttermilk and mix just until combined.
3Turn mixture out onto a floured countertop and form into a disc 1/2 in. (1 cm) thick. Brush with a bit of buttermilk and dust with oats. Cut into 8 wedges, transfer to a parchment paper-line baking sheet and bake for 15 to 20 min. or until just golden.
Tips

These cheesy biscuits are yummy paired with soups, stews and chili. We love the kick of heat from the cayenne, but if you're not a fan of spice, skip it and double the chives.
