In a bowl, combine scallops, maple syrup and pepper. Cover and marinate in refrigerator 1 hour.
Remove scallops from marinade and season with salt.
Heat oil and butter in a large skillet over medium-high heat. When butter is sizzling, sear scallops until cooked through, 1 to 2 min. per side. Serve hot or cold.
Marinate scallops for up to 24 hours for optimum flavour.
