Honey-Mint Fruit Salad

Ingredients

  • 2 Honeycrisp apples, cored and cubed
  • 1 fresh mango, peeled and cubed
  • 1 cup blueberries or blackberries 250 mL
  • 1 cup strawberries, quartered 250 mL
  • 1 lime, juiced
  • 1 tbsp honey 15 mL
  • 6 fresh mint leaves, thinly sliced
  • 1 tbsp desiccated unsweetened coconut 15 mL

Directions

  • Step 1

    In a large bowl, combine apples, mango and berries.

  • Step 2

    In a small microwaveable bowl, mix lime juice and honey. Microwave on HIGH for 15 to 20 sec. to soften honey. Pour mixture over fruit. Add mint and gently toss to combine.

  • Step 3

    In a dry skillet, toss coconut over medium heat until lightly toasted, 5 to 7 min. Sprinkle over fruit salad right before serving.
