Step 1

Preheat grill to medium-high.

Step 2

Combine mayonnaise with lemon juice, garlic, Worcestershire and Dijon in a small bowl. Season generously with pepper. Cover with plastic wrap and refrigerate.

Step 3

Lightly cross-hatch zucchini with scores about 1/2-in. (1 cm) apart. Brush all sides with olive oil. Season with salt and pepper. Set aside.

Step 4

Slice halloumi into cubes roughly 1 1/2 x 1/2-in. (4 cm x 1 cm) in size. Pat dry with paper towel. Set aside.

Step 5

Oil grate, then grill zucchini cut-side down, with lid closed, turning halfway through, 12 to 14 min or until grill marks form and zucchini is tender. Remove to a plate. Grill halloumi, with lid closed, turning halfway through, 2 to 4 min, or until grill marks form and cheese is warmed through. Remove to a plate.

Step 6

Arrange lettuce on a large platter. Drizzle over half of dressing. Layer with zucchini. Drizzle with remaining dressing. Top with halloumi and parmesan. Season with fresh pepper. Serve immediately.
